At my house dessert is a pretty rare occasion! We always have popsicles or fruit for Caeden to snack on, but I have never been one of those moms that cooks dinner and then a formal dessert with the warning of “eat your dinner and you can have dessert.” Now that I have 3 boys in the house I am trying to be more planned and organized with my meals and a special treat now and then is very much appreciated by the fellas in my house! I ran across this recipe a few days ago and wanted to try it and it was so good I had to share it with you. I also had a great idea for ways to make one dessert turn into two night’s worth with very little effort. Read on to see what I mean
Oatmeal Chocolate Chip Cookies
1 stick of Butter (softened)
6 Tablespoons of Brown Sugar
6 Tablespoons of Sugar
3/4 Cup Plain Flour
1/2 Teaspoon Baking Soda
3/4 Teaspoon Salt
1 Egg (beat well)
1/2 Teaspoon Vanilla
1/4 Teaspoon Water
1 Cup Oats
1 Cup Chocolate Chips
To begin preheat oven to 375 degrees. In a medium size bowl cream together the butter, brown sugar, and white sugar. Mix in the egg and blend together until smooth. Next add in vanilla and water and mix well. In a separate bowl mix together the flour, baking soda, and salt. Slowly add this mixture to the wet ingredients and mix well until smooth. Mix in the oats until smooth and then fold in the chocolate chips.
Lucky for me I had a great helper for all that mixing!
Next you will need to line 2 large baking sheets with wax paper sized to fit the pan. Scoop teaspoon size cookies and place on the cookie sheet using a spoon or a cookie scoop. I placed scoops in rows of 3 with a total of 4 rows allowing me to bake a dozen cookies at a time.
Place one cookie sheet in the oven and bake for 10-12 minutes or until cookies begin to turn brown. Cool cookies on a wire rack and enjoy! Yields 24-30 cookies depending on the size of the cookie scoops
Freezer Idea
In the photo above you will see that I scooped out enough cookies for 2 cookie sheets. Caeden and I baked one sheet of cookies and we placed the other sheet in the freezer! I left the cookies there overnight and this morning I removed the cookie sheet and placed the cookie dough balls in a freezer bag and placed the bag in the freezer. The next time that I want to bake cookies I can simply remove the bag from the freezer, place the cookies on my cookie sheet, and bake for 10-12 minutes on 375 degrees and viola! I will have fresh, homemade cookies with little to no effort! Now THAT’S a dessert I can go for
